French Onion Meatloaf

Ingredients

For the Meatloaf:

  • 2 pounds ground beef (80% lean)
  • 1 cup French onion soup mix (or 1 packet French onion soup mix)
  • 1 cup bread crumbs (plain or Italian)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

For the French Onion Topping:

  • 2 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional)
  • 1 cup beef broth
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded Gruyère or Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Meatloaf:
    • Preheat your oven to 375°F (190°C).
    • In a large mixing bowl, combine the ground beef, French onion soup mix, bread crumbs, Parmesan cheese, eggs, ketchup, milk, black pepper, and Worcestershire sauce. Mix until well combined but do not overwork the meat.
    • Shape the meat mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
  2. Bake the Meatloaf:
    • Bake in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
  3. Prepare the French Onion Topping:
    • While the meatloaf is baking, heat the butter and olive oil in a large skillet over medium heat.
    • Add the sliced onions, sugar, salt, and black pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.
    • Add the balsamic vinegar (if using) and beef broth to the skillet. Continue to cook until the liquid is mostly absorbed, about 5-7 minutes.
  4. Add the Topping:
    • Remove the meatloaf from the oven and carefully drain any excess grease.
    • Spread the caramelized onions over the top of the meatloaf. Sprinkle the shredded mozzarella and Gruyère cheeses evenly over the onions.
    • Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Let the meatloaf rest for a few minutes before slicing.
    • Garnish with fresh parsley and serve.
