Griddle tortellini

Ingredients:

  • 1 lb fresh or frozen tortellini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat the Blackstone Griddle:
    • Preheat your Blackstone griddle over medium heat.
  2. Cook the Tortellini:
    • Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions until al dente. Drain and set aside.
  3. Prepare the Ingredients:
    • While the tortellini is cooking, prepare the vegetables. Mince the garlic, chop the onion, dice the bell pepper, and halve the cherry tomatoes.
  4. Cook on the Griddle:
    • Once the griddle is hot, add the olive oil and minced garlic. Cook for about 1 minute until fragrant.
    • Add the chopped onion and diced bell pepper to the griddle. Cook, stirring occasionally, until the vegetables are softened and slightly caramelized, about 3-4 minutes.
    • Add the cooked tortellini and halved cherry tomatoes to the griddle. Stir to combine with the vegetables.
    • Cook for an additional 2-3 minutes until the tortellini is heated through and the cherry tomatoes have softened slightly.
    • Add the spinach leaves to the griddle and cook until wilted, about 1-2 minutes.
    • Season with salt and pepper to taste.
  5. Serve:
    • Remove the griddle from the heat and transfer the tortellini and vegetable mixture to a serving platter.
    • Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
  6. Enjoy:
    • Serve this delicious Blackstone griddle tortellini as a flavorful and satisfying meal for lunch or dinner!
