AIR FRYER ROCK CAKE

Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, cold and cubed
- 1 cup mixed dried fruits (raisins, currants, sultanas)
- Zest of 1 lemon
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- Additional sugar for sprinkling
Instructions:
- Preheat Air Fryer:
- Preheat your air fryer to 360°F (180°C).
- Prepare Dry Ingredients:
- In a large mixing bowl, combine the flour, sugar, baking powder, and baking soda.
- Add Butter:
- Add the cold, cubed butter to the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.
