AIR FRYER ROCK CAKE

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup mixed dried fruits (raisins, currants, sultanas)
  • Zest of 1 lemon
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional sugar for sprinkling

Instructions:

    • In a large mixing bowl, combine the flour, sugar, baking powder, and baking soda.
  3. Add Butter:
    • Add the cold, cubed butter to the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.
  4. Add Fruits and Zest:
    • Stir in the mixed dried fruits and lemon zest, distributing them evenly throughout the mixture.
  5. Combine Wet Ingredients:
    • In a separate bowl, whisk together the milk, egg, and vanilla extract.
  6. Mix Batter:
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  7. Portion the Dough:
    • Divide the dough into 8 equal portions and shape them into rough, rustic rounds. Place them on a plate or tray.
  8. Air Fry:
    • Place the shaped rock cakes in the air fryer basket, leaving space between each. Air fry at 360°F (180°C) for 12 minutes or until the tops are golden brown.
  9. Cool and Sprinkle with Sugar:
    • Allow the rock cakes to cool for a few minutes in the air fryer basket, then transfer them to a wire rack to cool completely. Sprinkle the tops with additional sugar for added sweetness.
  10. Serve:
