For the Topping (Optional):
- 2 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
- 2 tablespoons butter, melted
Instructions
Step 1: Prepare the Batter
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
Step 2: Mix the Cake
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture.
- Fold in the diced apples until evenly distributed.
Step 3: Bake
- Pour the batter into the prepared cake pan, spreading it evenly.
- For the topping: Mix the sugar and cinnamon in a small bowl. Sprinkle evenly over the cake and drizzle with melted butter (if using).
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Step 4: Cool and Serve
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips:
- Use tart apples like Granny Smith for a more balanced flavor or sweeter varieties like Honeycrisp for extra sweetness.
- Add ½ cup chopped walnuts or raisins for additional texture and flavor.
