Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk (or almond milk for dairy-free)
  • 2 cups (about 3 medium) peeled and diced apples

For the Topping (Optional):

  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons butter, melted

Instructions

Step 1: Prepare the Batter

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.

Step 2: Mix the Cake

  1. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture.
  2. Fold in the diced apples until evenly distributed.

Step 3: Bake

  1. Pour the batter into the prepared cake pan, spreading it evenly.
  2. For the topping: Mix the sugar and cinnamon in a small bowl. Sprinkle evenly over the cake and drizzle with melted butter (if using).
  3. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

Step 4: Cool and Serve

  1. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
