  • 2 green onions, chopped (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven:

  3. Season and Add Eggs:
    • Season the mixture with salt, pepper, and dried oregano (or other herbs of your choice). Crack the eggs into the bowl and gently stir to combine, being careful not to overmix.
  4. Transfer to Baking Dish:
    • Pour the mixture into the prepared baking dish or divide it evenly among the ramekins.
  5. Bake:
    • Place the baking dish or ramekins in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden. If using individual ramekins, the baking time may be slightly shorter, so check for doneness around 18 minutes.
  6. Serve:
    • Once baked, remove from the oven and let cool slightly before serving. Enjoy your baked cottage cheese eggs warm, garnished with additional chopped green onions or fresh herbs if desired.
