Baked Sweet and Sour Chicken

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 tablespoon vegetable oil
  • 1/2 cup pineapple juice
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup pineapple chunks
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a medium bowl, whisk together flour, salt, and pepper. Dredge chicken pieces in flour mixture until evenly coated.
  3. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together pineapple juice, rice vinegar, ketchup, soy sauce, honey, and cornstarch.
  5. Pour sauce over chicken and bring to a simmer. Cook until sauce has thickened, about 2 minutes.
  6. Stir in bell peppers, onion, and pineapple chunks. Cook until vegetables are tender-crisp, about 3-5 minutes.
  7. Transfer chicken mixture to a baking dish. Bake for 10 minutes, or until heated through.
  8. Garnish with sesame seeds, if desired.
