Introduction

Beef Noodles and Gravy is classic American comfort food at its finest. This dish features tender beef, rich homemade brown gravy, and hearty egg noodles, making it the perfect one-pot meal for chilly evenings or Sunday dinner.

Whether you use stew meat, chuck roast, or leftover pot roast, this recipe delivers deep, savory flavor and satisfying textures in every bite.

Ingredients

For the Beef and Gravy:

  • 2 tablespoons vegetable oil or butter

  • 1½ to 2 lbs beef stew meat or chuck roast, cut into 1-inch cubes

  • Salt and black pepper to taste

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 3 cups beef broth (low sodium preferred)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • 1 bay leaf (optional)

For the Noodles:

  • 12 oz wide egg noodles

  • Water and salt (for boiling)

  • 1 tablespoon butter (optional, for noodles)

Equipment Needed

  • Large skillet or Dutch oven

  • Medium pot for noodles

  • Whisk or wooden spoon

  • Tongs or spatula

Instructions

 Step 1: Brown the Beef

Heat oil in a large skillet or Dutch oven over medium-high heat.
Pat the beef dry and season with salt and pepper. Add to the pan and brown on all sides, about 5–6 minutes total. Do this in batches if needed to avoid crowding.

Browning is key! It builds the base flavor of the gravy.

 Step 2: Sauté Onion & Garlic

Lower heat to medium. Add the diced onion and cook for 3–4 minutes until soft and translucent.
Add the garlic and cook for another 30 seconds, just until fragrant.

 Step 3: Make the Roux

Sprinkle the flour over the beef and onion mixture. Stir and cook for 1–2 minutes to remove the raw flour taste.

Slowly whisk in the beef broth a little at a time to avoid lumps. Once combined, add:

  • Worcestershire sauce

  • Thyme

  • Onion powder

  • Garlic powder

  • Bay leaf (if using)

Bring to a gentle simmer, cover, and cook for 45 minutes to 1 hour, stirring occasionally, until beef is fork-tender and the gravy has thickened.

 Step 4: Cook the Egg Noodles

In a separate pot, boil water with a generous pinch of salt.
Cook egg noodles according to package directions (usually 7–8 minutes). Drain and toss with 1 tablespoon of butter for flavor and to prevent sticking.

 Step 5: Combine & Serve

Remove the bay leaf from the gravy. Taste and adjust seasoning (add more salt, pepper, or a splash of broth if needed).

You can:

  • Mix the noodles into the beef and gravy, OR

  • Spoon the beef and gravy over a bed of noodles for a plated presentation.

Garnish with fresh parsley, if desired.
