Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (canned or fresh)
  • 1/4 cup sliced black olives
  • 1/4 cup pickled jalapeños
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/2 cup salsa
  • Optional: sliced green onions, hot sauce

Instructions

  1. Preheat the Blackstone Griddle:
    • Heat your Blackstone griddle to medium-high heat.
  2. Cook the Ground Beef:
    • Add the ground beef to the hot griddle. Cook, breaking it up with a spatula, until browned and cooked through, about 8-10 minutes.
    • Drain excess fat if necessary.
    • Sprinkle the taco seasoning over the cooked beef, add water, and mix well. Cook for another 2-3 minutes until the seasoning is well incorporated.
  3. Prepare the Nachos Base:
    • Spread a layer of tortilla chips on the griddle.
  4. Add Toppings:
    • Evenly distribute the seasoned ground beef over the tortilla chips.
    • Sprinkle the shredded cheddar and Monterey Jack cheese over the beef.
    • Add black beans, corn, black olives, and pickled jalapeños.
  5. Melt the Cheese:
    • Close the lid of the griddle or cover the nachos with a large dome lid to melt the cheese. This should take about 5-7 minutes.
  6. Final Touches:
    • Once the cheese is melted and bubbly, remove the nachos from the griddle.
    • Sprinkle diced tomatoes, red onion, and cilantro over the nachos.
  7. Serve:
    • Serve the nachos with sour cream, guacamole, and salsa on the side.
    • Optionally, garnish with sliced green onions and a drizzle of hot sauce.
