Butter biscuits for swimming

Preparation Time: 15 minutes
Cooking Time: 12 minutes
Total Time: 27 minutes
Servings: 12 biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 2 tablespoons melted butter (for brushing)
  • Optional: honey or jam for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix Dry Ingredients:
    • In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Mix well to combine.
  3. Cut in Butter:
    • Add the cold cubed butter to the dry ingredients.
    • Use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.
  4. Add Buttermilk:
    • Pour the cold buttermilk into the flour-butter mixture.
    • Stir with a wooden spoon or spatula until the dough comes together. It should be slightly sticky but manageable.
  5. Shape and Cut Biscuits:
    • Transfer the dough onto a lightly floured surface.
    • Gently pat the dough into a rectangle about 1/2 to 3/4 inch thick.
    • Use a biscuit cutter or a round glass to cut out biscuits. Press straight down without twisting the cutter to ensure proper rising.
    • Place the cut biscuits onto the prepared baking sheet, leaving a little space between each one.
  6. Bake the Biscuits:
    • Brush the tops of the biscuits with melted butter.
    • Bake in the preheated oven for about 10-12 minutes or until the biscuits are golden brown and cooked through.
  7. Serve:
    • Remove the biscuits from the oven and let them cool slightly on a wire rack.
    • Serve the butter biscuits warm with honey, jam, or your favorite toppings.
    • These biscuits are perfect for a quick snack before or after swimming!

Tips:

  • Handle the biscuit dough gently and avoid overworking it to ensure tender biscuits.
  • For extra flavor, you can add a tablespoon of sugar to the dry ingredients or sprinkle some cheese or herbs on top of the biscuits before baking.
  • Store any leftover biscuits in an airtight container once cooled. Reheat them briefly in the oven or microwave before serving.
