Ingredients:

  • 1 pound boneless, skinless chicken breasts, diced
  • 8 lasagna noodles, broken into pieces
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Chicken:
    • In a large skillet, heat olive oil over medium-high heat.
    • Add the diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Saute Onion and Garlic:
    • In the same skillet, add a bit more olive oil if needed.
    • Add the chopped onion and minced garlic to the skillet. Saute until the onion is softened and translucent, about 3-4 minutes.
  3. Add Herbs and Noodles:
    • Stir in the dried basil, dried oregano, dried thyme, salt, and black pepper.
    • Add the broken lasagna noodles to the skillet, stirring to coat them with the onion and herb mixture.
  4. Add Liquids and Simmer:
    • Pour in the chicken broth and heavy cream into the skillet, stirring to combine.
    • Bring the mixture to a simmer, then reduce heat to medium-low. Let it simmer for about 10-12 minutes, or until the noodles are tender and the sauce has thickened.
  5. Combine Cheeses:
    • In a bowl, mix together the ricotta cheese, shredded mozzarella cheese, and grated Parmesan cheese.
  6. Add Chicken and Cheese Mixture:
    • Return the cooked chicken to the skillet, stirring to incorporate it into the pasta mixture.
    • Spoon dollops of the cheese mixture over the top of the skillet lasagna.
  7. Broil to Melt Cheese:
    • Preheat your oven’s broiler.
    • Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly and starts to turn golden brown.
  8. Garnish and Serve:
    • Remove the skillet from the oven.
    • Garnish the white chicken skillet lasagna with chopped fresh parsley.
    • Serve hot directly from the skillet, scooping out portions onto plates.
