Seafood salad

Seafood salad can be wonderfully refreshing and versatile. Here’s a recipe for a classic seafood salad:

Ingredients:

  • 1 pound mixed seafood (shrimp, squid, scallops, etc.), cooked and chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons plain Greek yogurt (or sour cream)
  • 1 tablespoon Dijon mustard
  • 2 celery stalks, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Ensure that the mixed seafood is cooked and chopped into bite-sized pieces. You can use a mix of your favorite seafood, such as shrimp, squid, or scallops.
  2. In a large mixing bowl, combine the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, chopped celery, red onion, fresh dill, and lemon juice. Mix until well combined.
  3. Add the cooked and chopped seafood to the bowl with the dressing mixture. Gently fold the seafood into the dressing until it is evenly coated.
  4. Season the seafood salad with salt and pepper to taste. Adjust the seasoning as needed.
  5. Cover the bowl and refrigerate the seafood salad for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, garnish with chopped fresh parsley for a burst of color and added freshness.
  7. Serve the seafood salad chilled as a side dish, on a bed of greens, or as a filling for sandwiches or wraps.
