Cheesy Bacon Garlic Butter Burger Rollups

Ingredients

For the Filling:

  • 1 lb (450g) lean ground beef (85/15 or 90/10)

  • 6 strips bacon, chopped

  • 1/2 medium yellow onion, finely diced

  • 2 cloves garlic, minced

  • 1 tsp Worcestershire sauce

  • 1/2 tsp smoked paprika

  • 1/2 tsp black pepper

  • 1/4 tsp salt (adjust to taste)

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

For the Rollups:

  • 1 (8 oz) can refrigerated crescent roll dough (8 count)

  • 2 tbsp finely chopped dill pickles (optional, for topping)

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter, melted

  • 2 cloves garlic, minced

  • 1 tbsp fresh parsley, finely chopped

  • 1/4 tsp garlic powder

For Serving (Optional):

  • Burger sauce, ketchup, or ranch dressing for dipping

  • Additional pickles on the side


Instructions

1. Cook the Bacon & Beef Filling

In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 1 tablespoon of bacon fat in the skillet.

Add the diced onion to the skillet and cook in the bacon fat for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Increase heat to medium-high and add the ground beef, breaking it apart with a spoon. Cook until browned and no pink remains, about 5-7 minutes. Drain any excess grease from the skillet.

Return the cooked bacon to the skillet with the beef. Stir in the Worcestershire sauce, smoked paprika, black pepper, and salt. Remove from heat and let the mixture cool for 5 minutes. Then, stir in both shredded cheeses until combined. Set aside.

2. Prepare the Garlic Butter Sauce

While the meat mixture cools, prepare the sauce. In a small bowl, combine the melted butter, minced garlic, chopped parsley, and garlic powder. Stir well and set aside.

3. Assemble the Rollups

Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.

Unroll the crescent dough and separate it into 8 triangles. Spoon an even amount of the cheesy beef and bacon filling onto the wider end of each triangle (about 2-3 tablespoons per triangle).

Gently roll up each crescent, starting from the wide end and tucking the filling in as you go, ending at the tip. Place each rollup on the prepared baking sheet, seam-side down, spacing them about 2 inches apart.

Brush each rollup generously with the prepared garlic butter sauce, reserving about half for later.

4. Bake

Bake in the preheated oven for 18-20 minutes, or until the crescent dough is puffed and deep golden brown.

5. Final Glaze & Serve

Remove the rollups from the oven. Immediately brush them with the remaining garlic butter sauce. If using, sprinkle the finely chopped pickles over the top for a classic burger garnish.

Let the rollups cool on the pan for 5 minutes before serving. This allows the cheesy filling to set slightly for easier handling.

Serve warm with your favorite burger sauces for dipping.
