Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup white rice, uncooked
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen peas and carrots
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat & Prep (5 minutes)
    • Preheat your oven to 350°F (175°C).
    • Lightly grease a 9×13 inch baking dish.
  2. Cook Beef & Veggies (10 minutes, Medium-High)
    • In a large skillet, cook the ground beef over medium-high heat until browned.
    • Add the chopped onion and minced garlic to the skillet. Cook for about 3 minutes until the onions are translucent.
  3. Add Rice & Liquids (2 minutes, Medium)
    • Stir in the uncooked rice, beef broth, and undrained diced tomatoes.
    • Season with paprika, black pepper, and salt. Bring the mixture to a boil.
  4. Simmer (18 minutes, Low)
    • Reduce heat to low, cover, and simmer for 18 minutes. The rice should be tender and most of the liquid absorbed.
  5. Mix in Veggies & Cheese (2 minutes, Low)

    • Sprinkle 1 cup of shredded cheese over the mixture and stir until well combined.
  6. Bake (20 minutes, 350°F)
    • Transfer the beef and rice mixture into the prepared baking dish.
    • Top evenly with the remaining 1 cup of cheese.
    • Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden brown.
  7. Garnish & Serve (2 minutes)
    • Remove from oven and let it cool for a couple of minutes.
