 Ingredients

Protein & Base:

  • 1 ½ lbs boneless, skinless chicken thighs (or breasts), cut into chunks

  • 2 tbsp olive oil or butter

  • Salt & black pepper, to taste

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

Vegetables:

  • 3 medium carrots, sliced

  • 2 celery stalks, chopped

  • 3 medium potatoes, peeled and cubed

  • 1 cup frozen peas (add at the end)

  • Optional: ½ cup corn kernels or green beans

Liquid & Seasoning:

  • 4 cups chicken broth (low sodium)

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • 1 bay leaf

  • Optional: ½ tsp paprika for depth

Thickener:

  • 2 tbsp all-purpose flour (or cornstarch slurry)

  • 2 tbsp water

 Instructions

 Step 1: Sear the Chicken

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.

  2. Season chicken pieces with salt and pepper.

  3. Sear the chicken in batches for 4–5 minutes until lightly browned. Remove and set aside.

 Step 2: Sauté Aromatics

  1. In the same pot, add more oil if needed.

  2. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened and fragrant.

 Step 3: Simmer the Stew

  1. Return the chicken to the pot.

  2. Add potatoes, chicken broth, thyme, parsley, bay leaf, and paprika.

  3. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until vegetables and chicken are tender.

 Step 4: Thicken the Stew

  1. In a small bowl, mix flour and water to make a slurry.

  2. Stir it into the stew and simmer uncovered for 5–10 minutes until thickened.

  3. Add frozen peas (and corn, if using) and cook for another 5 minutes.

 Step 5: Serve

  1. Remove bay leaf before serving.

  2. Taste and adjust seasoning with salt and pepper as needed.

  3. Serve hot with crusty bread, biscuits, or over rice.

 Serving Suggestions

  • Buttery dinner rolls or homemade biscuits

  • Side salad with vinaigrette

  • Served over mashed potatoes or egg noodles
