Chicken, Zucchini and Fresh Corn Burger

Ingredients:

  • 1 lb ground chicken
  • 1 small zucchini, grated
  • 1/2 cup fresh corn kernels (about 1 ear of corn)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil

For Serving:

  • Burger buns
  • Lettuce
  • Tomato slices
  • Red onion slices
  • Avocado slices
  • Mayonnaise, ketchup, or your favorite condiments

Instructions:

  1. Prepare Ingredients:
    • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
    • If using fresh corn, remove the kernels from the cob.
  2. Mix Burger Ingredients:
    • In a large mixing bowl, combine the ground chicken, grated zucchini, fresh corn kernels, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, fresh parsley (if using), salt, black pepper, paprika, and dried oregano. Mix well until all ingredients are thoroughly combined.
  3. Form Patties:
    • Divide the mixture into 4 equal portions and shape each portion into a patty. Place the patties on a plate or baking sheet.
  4. Cook Patties:
    • Heat the olive oil in a large skillet or grill pan over medium heat. Once hot, add the chicken patties and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the patties are golden brown and cooked through.
  5. Assemble Burgers:
    • Toast the burger buns if desired. Place a cooked chicken patty on the bottom half of each bun. Top with lettuce, tomato slices, red onion slices, avocado slices, and your favorite condiments. Cover with the top half of the bun.
  6. Serve:
    • Serve the chicken, zucchini, and fresh corn burgers immediately with a side of fries, a salad, or your favorite side dish.
