Ingredients:

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Sauté the Shrimp:
    • In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer, season with salt and pepper, and cook for about 2 minutes per side, until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant.
  4. Deglaze the Pan:
    • Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet. Let the liquid simmer for 2-3 minutes, until slightly reduced.
  5. Combine Ingredients:
    • Return the cooked shrimp to the skillet. Add the lemon zest, lemon juice, and chopped parsley. Toss everything together until the shrimp are well-coated in the sauce. Season with additional salt and pepper to taste.
  6. Add the Pasta:
    • Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is evenly coated with the sauce.
  7. Serve:
    • Divide the shrimp scampi and pasta among serving plates. Garnish with freshly grated Parmesan cheese and additional parsley, if desired. Serve with lemon wedges on the side.
