 Ingredients

Simple ingredients, big flavor.

  • 1 lb (450g) button mushrooms or cremini mushrooms, cleaned and halved

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • 5–6 cloves garlic, minced

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ¼ teaspoon crushed red pepper flakes (optional for a kick)

  • ⅓ cup freshly grated Parmesan cheese (plus extra for garnish)

  • 1 tablespoon chopped fresh parsley (optional)

  • ½ teaspoon lemon juice or zest (optional, for brightness)

 Equipment Needed

  • Large skillet (cast iron preferred for browning)

  • Cutting board & knife

  • Spatula or wooden spoon

 Instructions

 Step 1: Prep the Mushrooms

Wipe mushrooms clean with a damp paper towel and slice or halve them depending on size. Avoid washing under water unless necessary — mushrooms absorb moisture easily.

 Step 2: Sauté Mushrooms

Heat olive oil and butter in a large skillet over medium-high heat until the butter is melted and foamy.

Add mushrooms in a single layer. Don’t stir for the first 2–3 minutes — this allows them to brown properly.

Then stir occasionally and continue cooking for another 6–8 minutes, until mushrooms are deeply browned and have released most of their moisture.

 Step 3: Add Garlic & Seasoning

Reduce heat to medium. Add minced garlic and stir for 30–60 seconds, just until fragrant — don’t burn it!

Season with:

  • Salt

  • Black pepper

  • Optional red pepper flakes

  • Optional lemon juice/zest (adds brightness)

 Step 4: Add Parmesan

Turn off the heat and sprinkle grated Parmesan cheese over the hot mushrooms. Stir gently to combine — the cheese will melt and coat the mushrooms in a rich, salty, umami-packed layer.

 Step 5: Garnish & Serve

Transfer to a serving bowl or leave them in the skillet for a rustic presentation.

Top with:

  • Extra Parmesan

  • Fresh chopped parsley

Serve warm.
