CRANBERRY ORANGE CAKE

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder

  • Zest of 1 orange

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. Prepare Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugar:

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

4. Add Wet Ingredients:

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.

5. Alternate Dry Ingredients and Sour Cream:

  • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing until just combined.

6. Fold in Cranberries:

  • Gently fold in the cranberries until evenly distributed throughout the batter.

7. Bake:

  • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

8. Make the Glaze:

  • While the cake is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, fresh orange juice, and orange zest until smooth.

9. Cool and Glaze:

  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack. Drizzle the glaze over the cooled cake.

  • Once the glaze has set, slice and serve the Cranberry Orange Cake. Enjoy!
