  • 1 cup beer (lager or ale)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder

For Frying:

  • Vegetable oil, for frying

Instructions

Optional Marinade:

  1. Marinate the Chicken:
    • In a large bowl, mix the buttermilk, salt, pepper, paprika, garlic powder, and onion powder.
    • Add the chicken pieces, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Batter Preparation:

  1. Prepare the Batter:
    • In a large bowl, whisk together the sourdough discard and beer until smooth.
    • In another bowl, combine the flour, salt, pepper, paprika, garlic powder, onion powder, and baking powder.

Frying:

  1. Heat the Oil:
    • In a large, deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
  2. Coat the Chicken:
    • Remove the marinated chicken from the refrigerator. Let any excess marinade drip off.
    • Dip each piece of chicken into the sourdough beer batter, ensuring it is fully coated.
  3. Fry the Chicken:
    • Carefully place the coated chicken pieces into the hot oil, a few at a time, to avoid overcrowding.
    • Fry for about 10-12 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  4. Drain and Serve:
    • Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil.
    • Serve hot, with your favorite dipping sauces or sides.
