 Ingredients

  • 1 lb (450g) mushrooms, sliced (cremini, white button, or mix of wild mushrooms)

  • 1/2 teaspoon salt, or to taste

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon thyme or Italian seasoning (optional)

  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)

  • 1/4 cup grated Parmesan cheese (optional but adds depth)

  • Fresh parsley or chives, chopped (for garnish)

  • Optional: A splash of white wine or a squeeze of lemon juice

 Instructions

Step 1: Sauté the Aromatics

  1. Heat butter and olive oil in a large skillet over medium heat.

  2. Add the onions or shallots and sauté until softened (about 3–4 minutes).

  3. Stir in the garlic and cook for another 30 seconds until fragrant.

Step 2: Cook the Mushrooms

  1. Add the sliced mushrooms to the pan.

  2. Season with salt, pepper, and thyme or herbs.

  3. Cook for 8–10 minutes, stirring occasionally, until mushrooms release their moisture and begin to brown.

  4. Optional: Add a splash of white wine (2–3 tbsp) and let it reduce before adding cream.

Step 3: Make It Creamy

  1. Lower the heat to medium-low.

  2. Pour in the heavy cream and stir well.

  3. Simmer gently for 3–5 minutes, allowing the sauce to thicken.

  4. Stir in Parmesan cheese if using — it adds richness and helps thicken the sauce further.

Step 4: Finish and Serve

  • Adjust seasoning with more salt or a squeeze of lemon juice for balance.

  • Garnish with fresh parsley, chives, or cracked black pepper.

  • Serve warm.
