Crepe Recipe

Yield: Approximately 12 crepes
Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- Additional butter for cooking
Instructions:
- Prepare Batter:
- In a blender, combine the flour, eggs, milk, and salt. Blend until the mixture is smooth.
- Add Melted Butter:
- Add the melted butter to the batter and blend again until well incorporated. Alternatively, you can whisk the ingredients together in a bowl.
- Rest the Batter:
- Allow the batter to rest for at least 30 minutes. This resting period helps the flour absorb the liquid and results in softer crepes.
- Heat a Crepe Pan or Skillet:
- Place a non-stick crepe pan or skillet over medium heat. Add a small amount of butter and let it melt, coating the pan evenly.
- Pour and Swirl the Batter:
- Pour a small amount of batter into the center of the pan, swirling it around to cover the bottom thinly. Adjust the amount of batter depending on the size of your pan.
- Cook the Crepe:
- Cook the crepe for about 1-2 minutes until the edges start to lift. Use a spatula to carefully flip the crepe and cook for an additional 1-2 minutes on the other side.
- Repeat:
- Repeat the process with the remaining batter. Add a little butter to the pan before cooking each crepe to prevent sticking.
- Stack and Keep Warm:
- As you cook the crepes, stack them on a plate, covering them with a kitchen towel to keep them warm.
- Serve:
- Serve the crepes warm with your favorite fillings. For sweet crepes, you can use Nutella, fresh fruits, whipped cream, or maple syrup. For savory crepes, try ham and cheese, spinach and feta, or smoked salmon and cream cheese.
