detox southwest chicken soup

  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 4 cups low-sodium chicken broth
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish
  • Avocado slices, for serving

Instructions:

  1. Prep the Ingredients: Dice the chicken, onion, red and yellow bell peppers, jalapeño, and mince the garlic.
  2. Sauté Chicken: In a large pot, heat olive oil over medium-high heat. Add diced chicken and cook until browned on all sides, about 5 minutes. Remove chicken from the pot and set aside.
  3. Sauté Vegetables: In the same pot, add a bit more oil if needed. Sauté the onion, garlic, red and yellow bell peppers, and jalapeño until softened, about 5 minutes.
  4. Combine Ingredients: Add the diced tomatoes, black beans, corn, cumin, chili powder, and smoked paprika to the pot. Stir to combine.
  5. Add Chicken and Broth: Return the cooked chicken to the pot and pour in the chicken broth. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
  6. Season and Finish: Season the soup with salt, pepper, and lime juice. Adjust the seasonings to taste. Allow the soup to simmer for an additional 10-15 minutes.
  7. Serve: Ladle the detox Southwest chicken soup into bowls. Garnish with fresh cilantro and serve with avocado slices on the side.
