Instructions
Step 1: Preheat & Prep
-
Preheat oven to 375°F (190°C).
-
Line a 12-cup muffin tin with paper liners or grease with nonstick spray.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together:
-
2 cups flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
½–¾ cup sugar
Optional: Add spices like cinnamon or nutmeg here.
Step 3: Mix Wet Ingredients
In a separate bowl or large measuring cup, combine:
-
2 large eggs
-
¾ cup milk or buttermilk
-
⅓ cup oil or melted butter
-
1 tsp vanilla extract
Whisk until smooth.
Step 4: Combine & Add-Ins
-
Make a well in the center of the dry ingredients and pour in the wet mixture.
-
Stir gently with a spatula or spoon just until combined — lumps are okay!
-
Fold in your add-ins (berries, chocolate chips, etc.) if using.
Do not overmix – that can make muffins tough.
Step 5: Bake
-
Divide batter evenly among 12 muffin cups (fill about ¾ full).
-
Bake for 18–22 minutes, or until the tops are golden and a toothpick comes out clean.
-
Let cool in the tin for 5 minutes, then transfer to a wire rack.
