 Instructions

 Step 1: Preheat & Prep

  • 2 cups flour

  • 1 tbsp baking powder

  • ½–¾ cup sugar

Optional: Add spices like cinnamon or nutmeg here.

 Step 3: Mix Wet Ingredients

In a separate bowl or large measuring cup, combine:

  • 2 large eggs

  • ¾ cup milk or buttermilk

  • ⅓ cup oil or melted butter

  • 1 tsp vanilla extract

Whisk until smooth.

 Step 4: Combine & Add-Ins

  1. Make a well in the center of the dry ingredients and pour in the wet mixture.

  2. Stir gently with a spatula or spoon just until combined — lumps are okay!

  3. Fold in your add-ins (berries, chocolate chips, etc.) if using.

Do not overmix – that can make muffins tough.

 Step 5: Bake

  1. Divide batter evenly among 12 muffin cups (fill about ¾ full).

  2. Bake for 18–22 minutes, or until the tops are golden and a toothpick comes out clean.

  3. Let cool in the tin for 5 minutes, then transfer to a wire rack.
