Ingredients (for 4 servings):

  • 4 oz (115g) semi-sweet or dark chocolate (chopped)
  • 1 cup (120g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (30g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)
  • Butter and cocoa powder (for greasing the ramekins)
  • Optional: vanilla ice cream, whipped cream, or fresh berries for serving

Instructions:

Step 1: Preheat the Oven and Prepare Ramekins

  1. Preheat your oven to 425°F (220°C).
  2. Grease four 6-ounce ramekins with butter and dust them with cocoa powder, making sure they’re fully coated to prevent sticking.

Step 2: Melt the Butter and Chocolate

  1. In a medium microwave-safe bowl, combine the chopped chocolate and butter.
  2. Microwave in 20-30 second intervals, stirring after each interval until the mixture is completely melted and smooth.
    • Alternatively, you can melt them together in a heatproof bowl over a pot of simmering water.

  2. Add the eggs and egg yolks, one at a time, mixing well after each addition.
  3. Stir in the flour, salt, and vanilla extract (if using) until just combined. Be careful not to overmix.

  1. Divide the batter evenly among the prepared ramekins.

Step 5: Bake the Lava Cakes

  1. Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be set, but the center will remain soft and slightly jiggly.
    • Keep an eye on the cakes after 12 minutes to ensure the centers don’t overcook.

Step 6: Serve

  1. Let the cakes cool for 1 minute in the ramekins.
  2. Run a knife around the edges of each cake, then carefully invert the ramekins onto plates. The cakes should release easily.
  3. Serve immediately with vanilla ice cream, whipped cream, or fresh berries.
