fleish Salat

Homemade Fleischsalat Recipe

Ingredients:

  • 8 ounces (225g) bologna or cooked ham, cut into thin strips
  • 1/2 cup (120g) pickles, finely diced (German pickles are ideal)
  • 1/4 cup (50g) red or white onion, finely chopped (optional)
  • 1 cup (240g) mayonnaise
  • 1 tablespoon German or Dijon mustard
  • 1 tablespoon pickle juice (from the jar)
  • 1 teaspoon white vinegar (optional)
  • 1/4 teaspoon sugar (optional)
  • Salt and pepper, to taste
  • Freshly chopped parsley or chives, for garnish

Instructions:

  1. Prepare the Ingredients:
    • Cut the bologna or ham into thin strips, about 1-2 inches long.
    • Dice the pickles and finely chop the onion, if using.
  2. Make the Dressing:
    • In a medium bowl, mix together the mayonnaise, mustard, pickle juice, and vinegar (if using).
    • Add the sugar, and season with salt and pepper to taste. Mix until smooth.
  3. Combine the Ingredients:
    • Add the sliced meat, pickles, and onions (if using) to the dressing.
    • Mix everything well until the meat and pickles are evenly coated with the dressing.
  4. Chill the Salad:
    • Cover the bowl and refrigerate for at least 1 hour to let the flavors meld together.
  5. Serve:
    • Serve the Fleischsalat chilled, garnished with freshly chopped parsley or chives.
    • It can be enjoyed as a spread on crusty bread, rolls, or in sandwiches.

Tips:

  • Adjust the Creaminess: If you prefer a lighter version, you can replace part of the mayonnaise with sour cream or yogurt.
  • Flavor Variations: You can add a small amount of finely diced apple for a slightly sweet contrast or a pinch of paprika for a bit of spice.
  • Make-Ahead: Fleischsalat can be made a day ahead and kept in the refrigerator. It tends to taste even better after the flavors have had time to develop.

Serving Suggestions:

  • Serve Fleischsalat with fresh German bread or crusty rolls.
  • It also pairs well with boiled eggs or a simple green salad.

Storage:

  • Store the Fleischsalat in an airtight container in the refrigerator for up to 3-4 days.
