Total Time: 30 minutes
Servings: 4
Ingredients:
- 2 tablespoons olive oil
- 1 medium head of cauliflower, cut into small florets
- 1 pound (450g) mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper, to taste
- 1/4 cup vegetable or chicken broth
- 1/4 cup grated Parmesan cheese (optional)
- 2 tablespoons chopped fresh parsley, for garnish
- Lemon wedges, for serving (optional)
Instructions:
- Prepare the Ingredients:
- Cut the cauliflower into small florets and slice the mushrooms.
- Mince the garlic.
- Cook the Cauliflower:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the cauliflower florets to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes, until the cauliflower starts to brown and soften.
- Remove the cauliflower from the skillet and set aside.
- Cook the Mushrooms:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
- Add Garlic and Herbs:
- Reduce the heat to medium. Add the minced garlic, dried thyme, and dried rosemary to the skillet with the mushrooms. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant.
- Combine and Cook:
- Return the cooked cauliflower to the skillet with the mushrooms and garlic. Stir to combine.
- Pour in the vegetable or chicken broth and stir well. Cook for another 3-5 minutes, until the cauliflower is tender and the flavors are well combined.
- Finish and Serve:
- If using, sprinkle grated Parmesan cheese over the top and stir until melted and combined.
- Garnish with chopped fresh parsley.
- Serve with lemon wedges on the side for a fresh, tangy finish if desired.
Tips:
- For a vegan version, omit the Parmesan cheese or use a vegan cheese alternative.
- This dish pairs well with grilled chicken, steak, or fish, or it can be enjoyed on its own as a vegetarian main course.
- You can also add other vegetables like bell peppers, zucchini, or spinach for extra color and nutrients.
