Green beans

  • Ingredients:

    • 1 lb fresh green beans, trimmed and washed
    • 4-6 slices of bacon, chopped
    • 1 small onion, finely chopped (optional)
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • 1-2 tablespoons olive oil or bacon grease (if needed)
    • 1 tablespoon lemon juice (optional)
    • Red pepper flakes (optional, for a bit of heat)

    Instructions:

    1. Preheat the Griddle: Preheat your Blackstone griddle to medium-high heat.
    2. Cook the Bacon:
      • Place the chopped bacon on the hot griddle.
      • Cook until crispy, stirring occasionally, for about 5-7 minutes.
      • Remove the bacon from the griddle and set it aside on a paper towel-lined plate to drain.
      • If there’s an excess of bacon grease, drain some of it off, leaving about 1-2 tablespoons on the griddle.
    3. Cook the Green Beans:
      • Add the green beans to the griddle in the bacon grease.
      • Toss the green beans to coat them evenly and cook for about 5-7 minutes, stirring occasionally, until they start to blister and soften.
      • If using, add the chopped onion at this point and cook for an additional 3-4 minutes until the onion is soft and translucent.
    4. Add Garlic:
      • Add the minced garlic to the green beans and cook for another 1-2 minutes, stirring constantly to prevent the garlic from burning.
    5. Combine and Season:
      • Add the cooked bacon back to the griddle and toss it with the green beans.
      • Season with salt, pepper, and red pepper flakes (if using) to taste.
      • If desired, drizzle with lemon juice for a bright finish.
    6. Serve:
      • Transfer the green beans and bacon to a serving dish and enjoy hot.

    This dish makes a great side for any meal, adding a delightful combination of smoky bacon flavor and crisp-tender green beans. Enjoy!
