Ingredients:
- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup low-sodium beef broth
- 1/2 cup low-sodium chicken broth
- 1/2 cup shredded Gruyere or Swiss cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Caramelize Onions:

- Transfer the seared chicken breasts to a baking dish. Spread the caramelized onions evenly over the chicken.
- Add Broth:
- Pour the beef broth and chicken broth over the onions and chicken in the baking dish.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes. Remove the foil and sprinkle the shredded Gruyere or Swiss cheese on top of the onions and chicken.
- Broil:
- Increase the oven temperature to broil and return the baking dish to the oven. Broil for 3-5 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature should reach 165°F or 74°C).
- Garnish and Serve:
- Remove the dish from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
