  3. Sprinkle the flour over the cooked vegetables and stir well to coat. Cook for an additional 2 minutes, stirring constantly.
  4. Gradually pour in the chicken broth and milk or cream, stirring constantly to avoid lumps. Cook until the mixture thickens, usually for about 5-7 minutes.
  5. Add the cooked chicken, frozen peas, dried thyme, salt, and pepper to the mixture. Stir everything together and let it simmer for a few more minutes until the peas are warmed through. Remove from heat.
  6. Roll out one of the pie crusts and place it in the bottom of a 9-inch pie dish. Pour the chicken and vegetable filling into the pie crust.
  7. Roll out the second pie crust and place it over the top of the filling. Trim any excess dough and crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
