Homemade Italian Piselli (Peas with Pancetta)

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 ounces (115g) pancetta or prosciutto, diced
  • 3 cups (450g) frozen or fresh peas
  • 1/2 cup (120ml) chicken broth or water
  • 1 tablespoon butter (optional)
  • Salt and pepper, to taste
  • Freshly chopped parsley or mint (optional, for garnish)

Instructions:

  1. Sauté the Pancetta and Onions:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the diced pancetta and cook until it begins to brown and render its fat, about 3-4 minutes.
    • Add the chopped onion and sauté until it becomes translucent and soft, about 5-6 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add the Peas:
    • Stir in the peas and mix them well with the pancetta and onions.
    • If using frozen peas, no need to thaw them first; just add them directly to the skillet.
  3. Simmer:
    • Pour in the chicken broth or water and bring the mixture to a simmer.
    • Cover the skillet and let the peas cook for about 5-7 minutes, or until they are tender and heated through.
  4. Finish with Butter (Optional):
    • Stir in the butter, if using, to add richness to the dish.
    • Season with salt and freshly ground black pepper to taste.
  5. Serve:
    • Transfer the piselli to a serving dish and garnish with freshly chopped parsley or mint, if desired.

Tips:

  • Fresh or Frozen Peas: Use fresh peas when they are in season for the best flavor. Frozen peas work just as well and are more convenient.
  • Broth or Water: Use chicken broth for added depth of flavor, or water if you want a lighter dish.
  • Variations: Add a splash of white wine to the peas while they cook for an additional layer of flavor.
