Homemade Italian Piselli (Peas with Pancetta)
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 ounces (115g) pancetta or prosciutto, diced
- 3 cups (450g) frozen or fresh peas
- 1/2 cup (120ml) chicken broth or water
- 1 tablespoon butter (optional)
- Salt and pepper, to taste
- Freshly chopped parsley or mint (optional, for garnish)
Instructions:
- Sauté the Pancetta and Onions:
- Heat the olive oil in a large skillet over medium heat.
- Add the diced pancetta and cook until it begins to brown and render its fat, about 3-4 minutes.
- Add the chopped onion and sauté until it becomes translucent and soft, about 5-6 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the Peas:
- Stir in the peas and mix them well with the pancetta and onions.
- If using frozen peas, no need to thaw them first; just add them directly to the skillet.
- Simmer:
- Pour in the chicken broth or water and bring the mixture to a simmer.
- Cover the skillet and let the peas cook for about 5-7 minutes, or until they are tender and heated through.
- Finish with Butter (Optional):
- Stir in the butter, if using, to add richness to the dish.
- Season with salt and freshly ground black pepper to taste.
- Serve:
- Transfer the piselli to a serving dish and garnish with freshly chopped parsley or mint, if desired.
