  • 1/2 medium onion, finely chopped (optional for added flavor)
  • 2 garlic cloves, minced (optional)
  • 1 tsp salt
  • 1/2 tsp ground cumin (optional, for extra flavor)
  • 1 tbsp lime juice (optional, for added acidity and freshness)

Instructions:

  1. Prepare the Tomatoes:
    • If using fresh tomatoes, blanch them by placing them in boiling water for 1-2 minutes until the skins start to peel. Remove the tomatoes, place them in ice water, and then peel and dice them.
    • If you prefer a quicker option, you can use canned diced tomatoes (drain them before use).
  2. Prepare the Peppers:
    • Dice the jalapeño peppers or green chilies. You can adjust the quantity based on your heat preference. Remove the seeds and membranes if you want to reduce the heat level.
  3. Cook the Mixture:
    • In a medium saucepan, add the diced tomatoes, jalapeños, chopped onion, and garlic (if using).
    • Stir in the salt and cumin.
    • Bring the mixture to a simmer over medium heat and cook for 10-15 minutes, stirring occasionally, until the vegetables soften and the flavors meld together.
  4. Finish:
    • Stir in the lime juice (if using) for added brightness.
    • Taste and adjust seasoning (add more salt or spices if needed).
  5. Store:
    • Allow the mixture to cool slightly, then transfer it to an airtight container.
    • You can store it in the fridge for up to a week or freeze it for longer storage.
