Ingredients

  • 2 cups almond flour
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried rosemary, finely crushed
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Optional Toppings

  • Flaky sea salt
  • Sesame seeds
  • Poppy seeds
  • Everything bagel seasoning
  • Fresh chopped parsley
  • Cracked black pepper
  • Grated Parmesan cheese

Equipment Needed

  • Mixing bowl
  • Rolling pin
  • Parchment paper
  • Baking sheet
  • Pizza cutter or sharp knife
  • Pastry brush
  • Cooling rack

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C).

Line a large baking sheet with parchment paper.

Step 2: Prepare the Dough

In a microwave-safe bowl, combine the mozzarella cheese and cream cheese.

Microwave for 30–45 seconds, stirring halfway through, until the cheeses are melted and smooth.

In a separate bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, Italian seasoning, rosemary, thyme, oregano, salt, and black pepper.

Add the melted cheese mixture, egg, and olive oil to the dry ingredients.

Mix thoroughly until a soft dough forms.

If the dough feels sticky, allow it to cool for a few minutes before handling.

Step 3: Roll the Dough

Place the dough between two sheets of parchment paper.

Using a rolling pin, roll it into a thin rectangle approximately ⅛ inch thick.

The thinner the dough, the crispier the crackers will become.

Remove the top sheet of parchment paper.

Step 4: Score the Crackers

Using a pizza cutter or sharp knife, score the dough into squares, rectangles, or diamond shapes.

Prick each cracker with a fork to help prevent puffing during baking.

If desired, sprinkle the surface with flaky sea salt, sesame seeds, or additional herbs.

Step 5: Bake

Transfer the parchment paper with the dough onto the prepared baking sheet.

Bake for 15–18 minutes, or until the crackers are golden brown around the edges.

Watch carefully during the last few minutes to prevent overbaking.

Step 6: Cool Completely

Remove the baking sheet from the oven.

Allow the crackers to cool on the baking sheet for 10 minutes.

Transfer them to a cooling rack until completely cool.

As they cool, they will become even crispier.

Break apart along the scored lines before serving.

Tips for Perfect Keto Crackers

  • Roll the dough as evenly as possible for uniform baking.
  • Thin dough produces crispier crackers.
  • Use freshly grated Parmesan for the best flavor.
  • Rotate the baking sheet halfway through baking if your oven has hot spots.
  • Allow the crackers to cool completely before storing to maintain their crunch.
  • Store with a small piece of paper towel in the container to help absorb excess moisture.

Storage Instructions

Store completely cooled crackers in an airtight container at room temperature for up to 5 days.

For longer freshness, refrigerate them for up to 2 weeks.

To restore crispness, bake the crackers at 300°F (150°C) for 3–5 minutes, then let them cool completely.

These crackers can also be frozen for up to 3 months. Place parchment paper between layers to prevent sticking, and thaw at room temperature before serving.

Frequently Asked Questions

Are these crackers truly keto?

Yes. Made with almond flour and cheese instead of wheat flour, these crackers are low in carbohydrates and suitable for most ketogenic eating plans.

Can I use coconut flour instead?

Coconut flour absorbs much more moisture than almond flour, so it cannot be substituted in equal amounts. A reformulated recipe would be needed for best results.

Why aren’t my crackers crispy?

If the crackers are too thick or underbaked, they may remain soft. Roll the dough to about ⅛ inch thick and bake until the edges are golden. Cooling completely also helps them crisp up.

Can I make these dairy-free?

This recipe relies on cheese for both flavor and structure. Dairy-free alternatives may not produce the same texture, so results can vary.

Can I prepare the dough in advance?

Yes. Wrap the dough tightly in plastic wrap and refrigerate it for up to 24 hours before rolling and baking.
