Title: Slow Cooker Beef and Barley Soup

Ingredients:

  • 1.5 pounds (680g) beef stew meat, cut into bite-sized pieces
  • 1 cup pearl barley, rinsed
  • 4 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Brown the Beef (Optional):
    • In a skillet over medium-high heat, brown the beef stew meat on all sides. This step adds flavor but can be skipped if you prefer a quicker preparation.
  2. Prepare Vegetables:
    • Place carrots, celery, onion, and garlic in the slow cooker.
  3. Add Beef and Barley:
    • If you haven’t browned the beef in a separate skillet, add the raw beef pieces to the slow cooker. Add rinsed pearl barley as well.
  4. Pour in Broth and Tomatoes:
    • Pour beef broth and diced tomatoes (with their juice) into the slow cooker.
  5. Season the Soup:
    • Add dried thyme, dried rosemary, bay leaves, salt, and black pepper. Stir well to combine.
  6. Cook in the Slow Cooker:
    • Cover and cook on low heat for 6-8 hours or until the beef is tender and flavors meld.
  7. Add Peas (Optional):
    • About 30 minutes before serving, add frozen peas to the slow cooker, if using.
  8. Adjust Seasoning and Serve:
    • Taste the soup and adjust the seasoning if needed. Remove bay leaves before serving.
  9. Garnish and Enjoy:
    • Ladle the beef and barley soup into bowls. Garnish with fresh parsley if desired. Serve hot and enjoy the hearty flavors!
