Instructions:

  2. Prepare Vegetables:
    • Place carrots, celery, onion, and garlic in the slow cooker.
  3. Add Beef and Barley:
    • If you haven’t browned the beef in a separate skillet, add the raw beef pieces to the slow cooker. Add rinsed pearl barley as well.
  4. Pour in Broth and Tomatoes:
    • Pour beef broth and diced tomatoes (with their juice) into the slow cooker.
  5. Season the Soup:
    • Add dried thyme, dried rosemary, bay leaves, salt, and black pepper. Stir well to combine.
  6. Cook in the Slow Cooker:

  7. Add Peas (Optional):
    • About 30 minutes before serving, add frozen peas to the slow cooker, if using.
  8. Adjust Seasoning and Serve:
    • Taste the soup and adjust the seasoning if needed. Remove bay leaves before serving.
  9. Garnish and Enjoy:
    • Ladle the beef and barley soup into bowls. Garnish with fresh parsley if desired. Serve hot and enjoy the hearty flavors!
