Title: Hot and Sour Soup

Ingredients:

  • 6 cups chicken or vegetable broth
  • 1/2 cup bamboo shoots, thinly sliced
  • 1/2 cup tofu, cubed
  • 1/4 cup soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon chili sauce (adjust to taste)
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 2 eggs, beaten
  • 1 cup shiitake mushrooms, thinly sliced
  • 1/2 cup wood ear mushrooms, soaked and thinly sliced
  • 1/4 cup green onions, thinly sliced
  • Salt and white pepper to taste
  • 1 teaspoon sugar (optional)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Prepare Ingredients:
    • Soak wood ear mushrooms in warm water until softened, then thinly slice. Ensure all other ingredients are chopped and ready.
  2. Make Cornstarch Slurry:
    • In a small bowl, mix cornstarch with a few tablespoons of water to create a slurry. Set aside.
  3. Bring Broth to a Simmer:
    • In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
  4. Add Bamboo Shoots and Tofu:
    • Add bamboo shoots and tofu to the simmering broth. Cook for 5 minutes.
  5. Season the Soup:
    • Stir in soy sauce, rice vinegar, chili sauce, sesame oil, salt, white pepper, and sugar (if using). Adjust seasoning to taste.
  6. Thicken with Cornstarch Slurry:
    • Slowly pour in the cornstarch slurry, stirring continuously to prevent lumps. Allow the soup to thicken slightly.
  7. Add Mushrooms:
    • Add shiitake and wood ear mushrooms to the soup. Cook for an additional 5-7 minutes until the mushrooms are tender.
  8. Pour in Beaten Eggs:
    • Slowly pour the beaten eggs into the soup, stirring gently with a fork to create silky egg ribbons.
  9. Finish with Green Onions:
    • Add sliced green onions to the soup. Cook for an additional 2 minutes.
  10. Adjust Seasoning:
    • Taste the soup and adjust the seasoning if needed. Add more soy sauce, rice vinegar, or chili sauce according to your preference.
  11. Serve Hot:
    • Ladle the hot and sour soup into bowls. Garnish with fresh cilantro if desired.
