  • 1/2 cup mascarpone cheese or cream cheese, softened

Instructions:

  1. Chill Mixing Bowl and Whisk:
    • Place a mixing bowl and whisk in the refrigerator for about 15 minutes to chill.
  2. Whip Heavy Cream:
    • In the chilled bowl, whip the heavy whipping cream until soft peaks form.
  3. Add Sweetener and Vanilla:
    • Add the powdered erythritol (or your preferred sweetener) and vanilla extract to the whipped cream. Continue whipping until stiff peaks form.
  4. Mix in Lemon Zest and Juice:
    • Gently fold in the lemon zest and fresh lemon juice into the whipped cream mixture.
  5. Incorporate Mascarpone Cheese:
    • In a separate bowl, whisk the softened mascarpone cheese until smooth. Fold the mascarpone cheese into the whipped cream mixture until well combined.
  6. Chill:
    • Cover the bowl and let the keto lemon cream fool chill in the refrigerator for at least 1 hour to allow the flavors to meld.
  7. Serve:
    • Spoon the lemon cream fool into serving glasses or bowls.
  8. Garnish with Fresh Berries:
