Instructions

Step 1: Prepare the Lemon Filling

  1. In a large mixing bowl, combine the sweetened condensed milk, evaporated milk, and freshly squeezed lemon juice.
  2. Whisk or beat with a hand mixer until smooth and thickened. The acid from the lemon juice will help the mixture thicken naturally.
  3. Stir in lemon zest if desired.

Step 2: Assemble the Carlota

  1. In an 8×8-inch square dish (or a similar-sized dish), spread a thin layer of the lemon filling to coat the bottom.
  2. Add a layer of Maria cookies over the filling, breaking the cookies as needed to fit the shape of the dish.
  3. Spread another layer of lemon filling over the cookies, ensuring the cookies are completely covered.
  4. Repeat the process, alternating layers of cookies and lemon filling, until you run out of filling. Finish with a layer of lemon filling on top.

Step 3: Chill and Serve

  1. Cover the dish with plastic wrap and refrigerate for at least 4–6 hours or overnight to allow the cookies to soften and absorb the filling.
  2. Before serving, garnish with lemon slices, zest, or whipped cream if desired.
