For the Cod & Lemon Garlic Butter

  • 4 cod fillets (about 5–6 oz each), patted dry

  • 2 Tbsp butter (or butter + olive oil combo)

  • 3–4 garlic cloves, minced

  • Juice and zest of 1 lemon

  • Smoked paprika or dried oregano (about 1 tsp)

  • Salt & black pepper

  • Chopped parsley for garnish

For the Bowl Base

  • 2 cups cooked quinoa, rice, or cauliflower rice

 Step-by-Step Instructions

1. Roast the Brussels Sprouts (20–25 min)

Preheat oven to 400 °F (200 °C). Toss sprouts with olive oil, garlic powder (optional), salt, and pepper. Spread in a single layer on a baking sheet and roast for about 20–25 minutes, flipping halfway through, until caramelized and golden

2. Make Lemon Garlic Butter Sauce

While sprouts roast, melt butter in a small saucepan or skillet over medium heat. Add garlic; cook 1 minute until fragrant. Stir in lemon juice and zest, paprika or oregano, and seasonings until well blended .

3. Sear the Cod Fillets

Heat a skillet over medium-high. Brush cod fillets with the butter sauce. Sear each fillet for 3–4 minutes per side, or until golden and flaky inside. Baste with extra sauce as it cooks. Avoid overcooking to keep the fish moist and tender

4. Assemble and Serve

Divide cooked grains into bowls. Top with roasted Brussels sprouts and a cod fillet. Drizzle with any remaining garlic butter sauce and garnish with chopped parsley and lemon zest. Serve with lemon wedges for extra brightness
