Instructions

  1. Sauté Aromatics:
    • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  2. Cook Chicken:
    • Add the diced chicken to the pot and cook until it’s no longer pink, about 5-7 minutes. Add the diced ham and cook for an additional 2-3 minutes.
  3. Add Broth and Cream:
    • Pour in the chicken broth and bring to a boil. Reduce the heat to low and stir in the heavy cream.
  4. Add Cheeses:
    • Gradually add the shredded Swiss cheese, cheddar cheese, and grated Parmesan cheese to the pot, stirring continuously until the cheeses are fully melted and incorporated.
  5. Season and Thicken:
    • Stir in the Dijon mustard, salt, pepper, and paprika. If you prefer a thicker soup, mix the cornstarch with water to create a slurry and slowly add it to the soup, stirring constantly until it thickens to your desired consistency.
  6. Simmer:
    • Let the soup simmer on low heat for about 10-15 minutes to allow all the flavors to meld together. Stir occasionally to prevent sticking.
  7. Serve:
