Green Enchilada Chicken Soup

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 can (15 oz) green enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Juice of 1 lime

Toppings (optional)

  • Sour cream
  • Sliced avocado
  • Chopped green onions
  • Additional shredded cheese
  • Tortilla strips or chips

Instructions

  1. Sauté Aromatics:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  2. Cook Chicken:
    • Add the diced chicken to the pot and cook until it’s no longer pink, about 5-7 minutes. Season with cumin, chili powder, smoked paprika, ground coriander, salt, and pepper. Stir to combine and cook for another 2-3 minutes.
  3. Add Broth and Veggies:
    • Pour in the chicken broth, green enchilada sauce, and diced green chilies. Bring to a boil, then reduce the heat to low and let it simmer for about 15 minutes.
  4. Add Beans and Corn:
    • Stir in the black beans and corn, and let the soup simmer for another 5 minutes to heat through.
  5. Add Cream and Cheese:
    • Slowly stir in the heavy cream or half-and-half, shredded Monterey Jack cheese, and shredded cheddar cheese. Continue to stir until the cheeses are fully melted and the soup is creamy.
  6. Finish and Serve:
    • Stir in the chopped cilantro (if using) and the lime juice. Adjust the seasoning with additional salt and pepper if needed. Ladle the soup into bowls and garnish with your favorite toppings like sour cream, sliced avocado, chopped green onions, extra cheese, or tortilla strips/chips.
