Step 1: Mix the Dough
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Stir in the yogurt and oil until a shaggy dough forms. Gently knead with your hands or a spatula until the dough comes together—soft but not sticky. If needed, sprinkle in a little more flour.
Fold in the cheese, green onions, and garlic (if using). Mix until evenly distributed.
Step 2: Shape the Bread
Form the dough into a thick round disk, about 6–7 inches (15–18 cm) across and 1 inch thick. Dust lightly with flour on both sides.
Tip: For individual servings, divide the dough into 2–4 mini flatbreads.
Step 3: Cook on the Stovetop
Preheat a non-stick skillet or cast iron pan over medium-low heat. Brush lightly with oil or butter.
Place the dough into the skillet. Cover with a lid and cook for 7–9 minutes on the first side until golden brown.
Flip carefully and cook the other side for another 6–8 minutes, covered, until golden and cooked through. If the outside browns too fast, lower the heat slightly.
Press lightly on the top — if it springs back and the bottom sounds hollow when tapped, it’s ready!
Step 4: Slice and Serve
Transfer to a cutting board. Let it rest for 2–3 minutes, then slice into wedges. Serve warm with butter, sour cream, or your favorite dip.
