Ingredients

  • 12 oz (340g) spaghetti
  • 1/2 cup extra-virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Cook the Spaghetti:
    • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  2. Prepare the Garlic and Oil:
    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes (if using). Cook, stirring frequently, until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  3. Combine Pasta and Sauce:
    • Add the drained spaghetti to the skillet with the garlic and oil. Toss to coat the pasta in the oil and garlic mixture. If the pasta seems dry, add some of the reserved pasta cooking water, a little at a time, until the desired consistency is reached.
  4. Add Parsley and Season:
    • Remove the skillet from heat and stir in the chopped parsley. Season with salt and freshly ground black pepper to taste.
  5. Serve:
    • Divide the pasta among serving plates. Top with grated Parmesan cheese, if desired. Serve with lemon wedges on the side for a fresh, tangy finish.
