Ingredients:

For the Peach Filling:

  • 6 cups fresh or canned sliced peaches (about 6-8 peaches)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).

Peach Filling:

  1. Prepare Peaches:
    • If using fresh peaches, peel, pit, and slice them. If using canned peaches, drain the syrup.
  2. Combine Ingredients:
    • In a large mixing bowl, combine sliced peaches, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss until the peaches are evenly coated.
  3. Transfer to Baking Dish:
    • Transfer the peach mixture to a greased 9×13-inch baking dish, spreading it out evenly.

Cobbler Topping:

  1. Combine Dry Ingredients:
    • In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add Wet Ingredients:
    • Pour in the milk, melted butter, and vanilla extract. Stir until just combined. The batter will be slightly lumpy.
  3. Pour Batter Over Peaches:
    • Pour the cobbler batter evenly over the peaches in the baking dish.
  4. Bake:
    • Bake in the preheated oven for 40-45 minutes or until the cobbler topping is golden brown and a toothpick inserted into the topping comes out clean.
  5. Cool Slightly:
    • Allow the peach cobbler to cool for about 15 minutes before serving.
  6. Serve:
    • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
  7. Enjoy:
    • Enjoy this classic peach cobbler as a comforting and delicious dessert!

Note: You can customize this recipe by adding a sprinkle of cinnamon or a handful of chopped nuts to the cobbler topping before baking. Adjust the sugar in the filling based on the sweetness of your peaches.
