  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Sour cream for serving (optional)
  • Fresh dill for garnish (optional)

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, celery, and garlic. Sauté until the vegetables are softened.
  2. Add Sausage and Potatoes:
    • Add the sliced smoked sausage or kielbasa to the pot. Cook for a few minutes until the sausage begins to brown. Then, add the diced potatoes.
  3. Incorporate Sauerkraut and Seasonings:
    • Stir in the sauerkraut, bay leaf, caraway seeds (if using), diced tomatoes, and tomato paste. Mix well to combine.
  4. Pour in Broth and Water:
    • Pour in the chicken or vegetable broth and water. Bring the mixture to a simmer.
  5. Simmer:
    • Reduce the heat to low, cover the pot, and let the soup simmer for about 30-40 minutes or until the potatoes are tender.
  6. Season and Adjust:
    • Season the soup with salt and black pepper to taste. Adjust the seasoning according to your preference.
  7. Serve:
    • Ladle the sauerkraut soup into bowls. If desired, top each serving with a dollop of sour cream and garnish with fresh dill.
