Ingredients

  • 1 pound cooked shrimp, peeled, deveined, and chopped

  • ½ small red onion, finely diced
  • 1 small cucumber, diced
  • ½ cup cherry tomatoes, halved (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions
