 Ingredients

For the Meat Filling:

  • 1 lb (450g) ground lamb (or beef for cottage pie)

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 medium carrots, diced

  • 1 cup frozen peas (or corn)

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • ½ cup beef broth (or stock)

  • 1 tsp fresh thyme (or ½ tsp dried)

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp olive oil or butter (for cooking)

For the Mashed Potato Topping:

  • 2 lbs (900g) potatoes (Yukon Gold or Russets), peeled and cubed

  • ½ cup whole milk (warm)

  • ¼ cup butter

  • Salt and pepper to taste

  • Optional: ½ cup grated cheddar cheese (for a cheesy crust)

 Instructions

Step 1: Prepare the Mashed Potatoes

  1. Bring a large pot of salted water to a boil.

  2. Add potatoes and cook until fork-tender (about 15 minutes).

  3. Drain, then mash with butter and warm milk. Season with salt and pepper.

  4. Set aside.

Step 2: Make the Meat Filling

  1. In a large skillet over medium heat, add olive oil and sauté onions and carrots for 5 minutes until softened.

  2. Add garlic and cook for another 1 minute.

  3. Add ground lamb (or beef) and cook until browned, breaking it apart with a spoon (about 6–8 minutes).

  4. Drain excess fat if necessary.

  5. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.

  6. Add beef broth and simmer for 5–7 minutes until slightly thickened.

  7. Stir in frozen peas (they’ll cook in the oven).

Step 3: Assemble the Pie

  1. Preheat oven to 400°F (200°C).

  2. Spoon the meat mixture into a 9×13-inch baking dish or individual ramekins.

  3. Top evenly with mashed potatoes. Use a spatula or fork to smooth or make a decorative pattern.

  4. Optional: Sprinkle grated cheddar cheese on top.

Step 4: Bake

  1. Bake for 25–30 minutes, or until golden and bubbling.

  2. For a crispy top, broil for the last 2–3 minutes — but keep an eye on it!

Step 5: Cool & Serve

  1. Let rest for 5–10 minutes before serving.

  2. Garnish with chopped parsley or thyme if desired.

  • Fridge: Store leftovers covered for up to 4 days.

  • Freezer: Freeze the fully cooked pie (or individual portions) for up to 2 months.

  • Reheat: In the oven at 350°F or microwave individual servings.
