Sourdough Biscuits

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 cup sourdough starter discard (unfed)
  • 1/2 cup buttermilk (more if needed)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  3. Cut in the Butter:
    • Add the cold, cubed butter to the flour mixture.
    • Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add the Sourdough Starter and Buttermilk:
    • Add the sourdough starter discard and buttermilk to the flour and butter mixture.
    • Stir until just combined. If the dough is too dry, add a little more buttermilk, 1 tablespoon at a time, until the dough comes together.
  5. Knead and Roll Out the Dough:
    • Turn the dough out onto a lightly floured surface.
    • Knead the dough gently a few times until it comes together.
    • Roll out the dough to about 1/2 inch thick.
  6. Cut the Biscuits:
    • Use a biscuit cutter or a glass to cut out biscuits from the dough.
    • Place the biscuits on the prepared baking sheet, leaving a little space between each one.
  7. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown on top.
  8. Cool and Serve:
    • Allow the biscuits to cool slightly on a wire rack before serving.
    • Serve warm with butter, honey, or your favorite toppings.
