Air Fryer Stuffed Chicken Breasts

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

For the Coating:

  • 1 cup breadcrumbs (panko or regular)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Cooking spray

Instructions:

1. Preheat Air Fryer:

  • Preheat your air fryer to 375°F (190°C).

2. Prepare Chicken Breasts:

  • Butterfly each chicken breast by slicing horizontally through the middle, but not all the way through, creating a pocket for the stuffing. Season both sides with salt and pepper.

3. Make the Stuffing:

  • In a bowl, combine chopped spinach, sun-dried tomatoes, feta cheese, minced garlic, and olive oil. Mix well.

4. Stuff the Chicken:

  • Spoon the stuffing mixture into the pocket of each chicken breast. Press the edges to seal.

5. Coat the Chicken:

  • In a separate bowl, mix breadcrumbs, paprika, and dried thyme. Brush each stuffed chicken breast with olive oil and coat them evenly with the breadcrumb mixture, pressing the crumbs onto the chicken.

6. Air Fry:

  • Lightly coat the air fryer basket with cooking spray. Place the stuffed chicken breasts in the basket, leaving space between them. Spray the tops with cooking spray.

7. Air Fry:

  • Air fry at 375°F (190°C) for 25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F (74°C).

8. Rest and Serve:

  • Allow the stuffed chicken breasts to rest for a few minutes before slicing. Serve with your favorite sides.
